What's Hanukkah without potato latkes! The ones that I make are so good, that I went off my healthy eating this week to have some. Prior to this, I had totally stopped having any foods that are fried, but I made an exception to have a few of my delicious, crispy latkes. I don't use a recipe. I just grind up potatoes in my Vita Mix, remove as much water as possible, add a little salt and flour and an egg, and fry them. And of course, I eat them with applesauce.
I did try to make them as healthy as possible. For instance, I used organic potatoes. I used a dash of Celtic sea salt. I used a spoonful of wholewheat flour. I use an organic egg. I use coconut oil. And, organic applesauce. I don't know it I would consider these healthy, but I did make it as healthy as I could.
If anyone would like a recipe, there are many, here is one. You can adapt it the way I did to make it healthier.
Classic Potato Latkes
2 large potatoes, peeled and coarsely grated
1 small onion, grated
1 teaspoon lemon juice
2 eggs
Oil
1 1/2 teaspoon all-purpose flour
Salt and pepper
Applesauce, sour cream, preserves or granulated sugar sprinkling
In a large bowl, combine potatoes, onion, lemon juice, eggs and 1 tablespoon oil. Mix well
Blend in flour. Season with salt and pepper to taste. Mix thoroughly.
Mince onion.
Add eggs, 1 tablespoon oil, lemon juice and flour and blend.
Add shredded potatoes into onion mixture. Season to taste with salt and pepper.
In large heavy skillet, heat oil to be hot. Spoon the potato mixture into hot oil.
Brown on both sides, turning only once. Drain on paper towels. Serve immediately with applesauce, sour cream, preserves or granulated sugar for sprinkling over latkes.
Maybe we do not have to give up unhealthy foods that we love entirely, maybe we can have them once in a while and substitute healthy and organic ingredients for the unhealthy ones.
